chicken caesar salad
Makes 1 portion
1 tablespoon olive oil
1 slice thick white bread (crusts trimmed), chopped into small cubes
Dressing
2 tablespoons mayonnaise
1 tablespoon grated Parmesan cheese
1 teaspoon lemon juice
½ small clove garlic, crushed
1/8 teaspoon Dijon mustard
few drops of Worcestershire sauce
few drops of Tabasco sauce
½ cup diced cooked chicken
½ head romaine lettuce, sliced or torn into pieces
1 tablespoon grated Parmesan cheese
The croutons and dressing for this salad can be made the evening before. All you need to do in the morning is mix all the ingredients together and toss with the dressing. You could even use ready-made croutons, in which case all you need to do is assemble the ingredients—so simple!
Heat the olive oil in a small nonstick frying pan and add the cubes of bread. Fry, turning occasionally, until golden brown. Remove with a slotted spoon and drain on paper towels.
In a bowl, combine all the dressing ingredients. Mix together the chicken and lettuce and toss with most of the dressing. Pack the grated Parmesan and the croutons in a separate plastic container for your child to scatter over the salad at lunchtime.
